Legend has it that in ancient Rome, the soldiers who performed the emperor's bodyguard duties had the position of Praetorian guards. Their main role was to defend the emperor at any cost, and it was here, on long journeys between wars, along dangerous roads, that the emperor Gaius Julius Caesar would order his praetorian guards to defend his foodstuffs in store for his copious banquets. Of all the things he could have, he ordered his loyal fighters to carry and protect the 'noble shoulder cut', produced by the most coveted butchers of the time.
Bound with the typical jute lace to a bamboo cane, it was carried on the shoulders of the Praetorian guards along the 'Via Salaria', from which it later took its name. Having survived over the centuries, 'il Pretoriano taglio antico imperiale' made from porks from Umbria, it was rediscovered from its roots in ancient Rome and revisited by the expert pork butchers of Umbria.
It is matured in cellars for such a long time that the meat becomes darker and more consistent, and has a strong flavour due to the more intense salting. The leanness when cut is almost surprising. With its aggressiveness but also looseness in the mouth, it does not disappoint those who love intense and balanced flavours. Excellent with mature cheeses and full-bodied red wines.
