The Gorzano is a pecorino made using milk from sheep that are born, raised and bred exclusively within the Gran Sasso and Monti della Laga National Park, to which much of the municipality of Amatrice belongs. And it is thanks to this excellent raw material that Gorzano becomes what many consider to be one of the best sheep's milk cheeses in Italy and in the world, witness the fact that in 2019 it won first prize in the Seasoned Pecorino category at the prestigious World Cheese Award competition.
At the Caseificio Storico di Amatrice, the art of cheese-making has been refined and modernized in full respect of tradition, succeeding in enhancing the product to the fullest through, above all, the use of a mild rennet that is never preponderant in the mouth, so the pungency remains adequate and the flavor is never excessive.
The paste of a perfect straw-yellow color is very crumbly and meltable, the eyes are small and uneven testifying to the use of non-aggressive starters excellent for aging. The Gorzano we offer has a maturation of 6 to 8 months, a time when the product, in our opinion, reaches the peak of its maturation.
Prevalent hints of cooked lactic and melted butter, presence of fresh herbaceousness and distinct floral notes, these are the olfactory tasting parameters we find in this pecorino. Sapidity very much in balance with sweetness, bitterness and acidity absent.
