This is a mountain cow's milk cheese, matured for more than 10 months in spruce boards and then refined with fruit (figs, plums, apricots, sultanas) rehydrated by a sauce made from soft muscatel grappa and Umbrian millefiori honey.
A product that is full of aromas in the mouth, from fruity to alcoholic to milky melted and toasted, with distinct sweet notes.
