It is a soft pasteurised goat's milk cheese with a maximum ripening time of 60 days.
Toma has a purely sweet taste in the mouth with a slight acid note due to the type of milk and a slight piquancy. The main aromas are fresh lactic and animal specifically ircinous, the latter not being excessive given the short maturation and heat treatment the milk has undergone.
