This Umbrian Shoulder Cut, that we decided to call 'Fiocco' from the part of the pig it is made, is a prized anatomical cut from the shoulder of heavy Umbrian pigs.
Hand-trimmed and cured with care, it undergoes a salting process similar to that of Prosciutto, giving it a rich, delicate flavor. Aged for six months, the texture is reminiscent of pancetta, while the flavor is peppery and robust, embodying Umbrian rural tradition.
