"Botte & Fieno" Cheese

The product is sold vacuum-packed in a bag of approximately 250g.

The forms of cow cheese selected are sealed in terracotta jars wrapped in cotton cloth and immersed in various types of aromatic organic hay.

A prayer to St Joseph is placed in the terracotta pots along with the ‘Botte & Fieno’ cheese wheels. This is because the cheese was first made around 19 March, St Joseph's Day.

The forms of Botte & Fieno cheese acquire scents of dry, aromatic flower essences on the nose. On the palate it expresses itself delicately. In this cow's cheese, cooked lactic and dry vegetable notes prevail, with almost no spiciness on a very soluble and compact paste.

A cheese that goes very well with citrus jams or truffle-flavoured honey.
