The name of this blue cheese is due to the special ripening with organic 'Marasche' cherries from Cantiano.

This is a blue cow's milk cheese that after careful surface cleaning is first 'massaged' with sweetened sour cherry syrup, then garnished with the sweet fruit and finally vacuum-packed to facilitate absorption of the tanning aromas.

On tasting, one is immediately captivated by a balanced creaminess mixed with slight spiciness, softened by the elegant sweetness conferred by the cherries in juice. Floral and ripe fruit notes are in absolute predominance and persist on the palate.
