Overview:

Muffato della Sala is a captivating dessert wine from Antinori, produced from a blend of Sauvignon Blanc, Grechetto, Traminer, Sémillon, and Riesling grapes affected by Botrytis Cinerea, also known as noble rot. This wine is a true expression of the unique terroir of Castello della Sala, offering a rich and unmistakable flavor profile.

Vinification:

  • Harvesting: Hand-harvested grapes from vineyards at 200-450 meters (656-1476 feet) above sea level. Multiple passes through each vineyard parcel to select perfectly affected nobly rotted berries.
  • Processing: Grapes were gently crushed with stems, then pressed. Must underwent fermentation for 18 days at approximately 17°C (63°F).
  • Aging: Aged in French oak barriques (Alliers & Tronçais) for about 6 months, followed by additional aging in stainless steel tanks for 2 years.

Historical Data:

  • First Vintage: 1987
  • Evolution: Initially produced with Sauvignon Blanc (50%), Grechetto (30%), and Drupeggio (20%). The blend has evolved over the years to its current composition.
  • Terroir: Produced from grapes harvested late in the season (late October to early November) to take advantage of morning mists that promote Botrytis Cinerea, concentrating sugars and aromas in the grapes.

Tasting Notes:

  • Color: Intense bright golden yellow
  • Aroma: Delicate and elegant with dominant notes of ripe fruit, especially apricots, peaches, and citrus, accompanied by floral aromas and hints of iodine.
  • Taste: Extraordinary balance between freshness and sweetness, with flavors that echo the nose and a lingering, harmonious finish.

  • Perfect with: Rich desserts like crème brûlée, fruit tarts, blue cheeses, and foie gras.
